The Farm is based in the mild climate of the Marshwood Vale, 3 miles from the sea immediately inland from Lyme Bay. Ranging from 200 ft. to 750 ft. above sea level, the Farm has an average rainfall of 36 inches and soil that is heavy clay. These are ideal grass growing conditions.
Maize is also grown, a high-energy cow food, for feeding to the herds in the winter when the cows are housed. The muck from the cows is returned to the land for the grass and maize to grow - farmers don't like waste!
There are 5 herds of cows and their milk only is used to make Denhay's West Country Farmhouse Cheddar. Denhay are passionate about the quality and consistency of their products and this quality has been recognised with all the UK's top food awards.

Whole pork legs are cured on the bone in a natural mixture of West Country Bramley Apple juice, West Country honey, curing salts and local herbs. They are then lightly smoked over beech wood and air dried for around a year, producing a unique 'prosciutto' style product. The ham is then trimmed, boned and very thinly sliced before being vacuum packed into 230g packs.
Denhay Air Dried Ham is delicious served simply as a starter with melon or asparagus and it is wonderful to cook with. Wrapped around either salmon fillets or chicken breast and then baked in the oven it adds a unique depth of flavour to food. It is also excellent used in pasta sauces.

West Country Farmhouse Cheddar has been made at Denhay since 1959 using the skills and techniques employed in the Marshwood Vale for generations.
Using milk from Denhay cows, this is pastuerised and a microbial rennet is used, making the cheese suitable for vegetarians. Denhay Cheddar is then matured to give it its distinctive flavour.
Award winning 2kg cloth-bound truckle, made from the milk of Denhay's own cows. The 'Drum' is a nutty textured, mellow cheddar matured on our farm for not less than seven months. The cloth bindings are put on by the cheesemaker to protect the cheese as it matures; this must be removed before eating the cheese.
A natural mould forms on the cloth as the cheese matures and is the sign of a well made traditional cheddar.
